Here’s a taste of what’s to come… 6 courses of pizza with matched wines!

Antipasto

  • Focaccia ripiena with mortadella , Bronte pistacchio, parmesan and aged balsamic vinegar

Dough: High hydration with lancer single origin wheat From NSW and multigrain

  • Fried Pizza with char-grilled pineapple, prosciutto and stracciatella toped with smoked balsamic vinegar

Dough: Imported 00 flour with activated charcoal and pineapple fermented water

Main

  • Padellino with Marinara “MIX”, octopus, garlic, sugo, cantabrian anchovies

Dough : Khorasan wheat from Tuerong farm, steamed and then finished in the oven

  • My version of meat pie with slow cooked chunky beef in a rich gravy

Dough: Multigrain cloudy dough

Dessert

  • Pizza-misu’, Coffee infuse pizza sponge and Trattoria Emilia signature tiramisu

Dough: High hydration with lancer single origin wheat From NSW infused with coffee, and steamed

  • Strawberry Pizz-vlova

Dough: Strawberry pizza dough with 00 imported, steamed and then finished in the oven
